Christmas Rice




Ingredients:

Cooked Rice- 1 cup
Orange Bell Peppers- 1/4 cup chopped
Yellow Bell Peppers- 1/4 cup chopped
Red Bell Peppers- 1/4 cup chopped
Raisins- 1/4 cup
Celery- 1/4 cup chopped
Green Onions- 1/2 cup
Ginger- 1/2 tbsp grated
Garlic- 1/2 tbsp grated
Butter- 2 tbsp

Method:

1. Take a heavy bottomed pan. Add butter and let it melt completely.

2. When the butter gets hot enough add in grated ginger and garlic and saute until the raw smell goes away.

3. Add in chopped green onions and saute it well.

4. Add in orange, yellow, red bell peppers and celery.

5. Saute it until cooked for about 2 mins. But make sure not to overcook the vegetables.

6. Add Raisins and saute it well until it gets plump.

7. Add salt and give it a good stir.

8. Finally add in cooked rice and stir it well with the vegetables.

Serve with Gravy or Soup 😃

Oatmeal Raisin Cookies



Ingredients:

Raisins- 1 cup
Dark Brown Sugar- 1 cup
Vanilla Extract- 2 tsp
Sugar- 3/4 cup
Butter- 1 cup
Baking Soda- 1 tsp
Salt- 1 tsp
Cinnamon Powder- 2 tsp
Eggs- 2
All Purpose Flour- 2 cups
Quick Oats- 3 cups


Method:

1. Preheat oven to 375 degrees F (190 degrees C).

2. In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy.

3. In a separate bowl add flour, baking soda, cinnamon, and salt.

4. Gradually beat the flour mixture into butter mixture.

5. Stir in oats and raisins. Drop by teaspoonfuls onto lined cookie sheets.

6. Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.
